The slow brew

    Heat
    500 ml water in a copper or steel vessel until the surface trembles.

    Add
    1 tbsp blend. Lower the flame.
  3. 03
    Reduce
    Simmer until the volume halves — about 8 minutes.
  4. 04
    Strain
    Into a clay tumbler. Add jaggery to taste, never sugar.
